Artichoke Nibbles

Ingredients

  • 2 (6 oz.) jars marinated artichoke hearts
  • 1 sm. Onion, chopped
  • 1 clove garlic, minced
  • 1/4 c. fine dry bread crumbs
  • 1/4 t. salt
  • 1/8 t. peper
  • 1/8 t. oregano
  • 1/8 t. hot pepper seasoning
  • 1/2 lb. Sharp cheddar cheese, shredded
  • 2 T. minced parsley
  • 4 eggs

Preparation

Step 1

Drain marinade from one jar artichokes into a frying pan. Drain other jar.
Chop all the artichokes and set aside. Add garlic and onion to the frying pan and sauté until onion is limp. Add crumbs, salt, pepper, oregano and hot pepper. Stir in cheese, parsley, artichokes and onion mixture. Add beaten eggs over top.

Turn into a greased 7 X 11 inch pan. Bake in 325 oven for 30 minutes or until set when lightly touched. Let cool in pan; then cut into one-inch squares. Serve cold or reheat in pan at 325 degrees for 10 minutes.
