Cream of Crab & Asparagus Soup

Ingredients

  • 1 pound Maryland jumbo lump crab meat
  • 1/2 tablespoon fresh parsley
  • 2 teaspoons OLD BAY Seasoning
  • 1/8 cup butter
  • 1 pints heavy whipping cream
  • 1 pint half and half
  • cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1/4-1/2 lb asparagus
  • 2 TBS Olive oil

Preparation

Step 1

Trim and cut asparagus into 1/4' - 1/2" pieces. Sauté the asparagus for 2–3 minutes.

Bring milk, half and half, and heavy whipping cream to a boil. Add crab meat, Asparagus, fresh parsley, Old Bay Seasoning, butter, salt and pepper. When it starts to boil, make a paste of cornstarch and water to thicken soup.

Simmer until ready to serve. Stir occasionally and skim the top.
