Turkey and pancetta meatballs

Ingredients

  • 1 lb ground turkey
  • 1 oz thinly sliced pancetta, finely chopped
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 3/4 cup bread crumbs
  • salt and pepper
  • 1 egg plus 1 egg yolk
  • 1 tbsp Italian spices
  • olive oil

Preparation

Step 1

Mix turkey, pancetta, onion, garlic and breadcrumbs in a large bowl. Season with salt and pepper. Stir in egg and yolk, and spices. Form into 1 inch meatballs (use a scooper).
Heat 1-2 tbsp oil in large skillet over medium. Cook meatballs in single layer until browned on all sides, 7 minutes.
