Ingredients
- salt and pepper
- 12 oz fettuccine
- 1 tbsp butter
- 1 shallot, finely chopped
- 1/4 cup heavy cream (can use half and half)
- 10 oz frozen peas, thawed
- 8 slices prosciutto, halved lengthwise and sliced crosswise
- 1/2 cup grated Parmesan
Preparation
Step 1
in large pot of boiling water, cook pasta until al dente. Reserve 1 cup of pasta water, drain pasta and return to pot.
Make sauce: In large skillet, melt the butter, add shallot and cook until soft, 5 minutes. Add cream, peas and prosciutto, simmer over medium heat 3-4 minutes.
Pour the sauce over the pasta, add Parmesan and season with salt and pepper. Add pasta water to thin the sauce as desired. Top with more Parmesan to serve.
