Edamame pasta salad

Ingredients

  • 1 1/2 pound corkscrew pasta
  • 2 bags frozen shelled edamame
  • 1 (each) finely diced green and yellow pepper
  • 1/2 sweet onion finely diced
  • 2-2 1/2 cups reduced fat mayonaise
  • 2 tablespoons white wine vinegar
  • 1 teaspoon each of salt and sugar
  • 1/2 cup choppe chives

Preparation

Step 1

1. Cook pasta in large pot of salted boiling water until al dente. Drain. Cook edamame to al dente, about 5 minutes.

2. Mix together celery,peppers,onion, mayonaise, vinegar, salt, sugar and chivesin a large bowl. Add the drained pasta and edamame; toss well to mix. adjust seasoning to taste
