White Bean and Kale Casserole

Ingredients

  • 2 T oil
  • 1 smaell onion , choipped
  • 1 carrot, chopped
  • 1 celery rib, chopped
  • 4 garlic cloves, minced
  • 6 T tomato paste
  • 1 t dried thyme
  • 1 3/4 c veggie broth
  • 1 bunch kale, ribs removed, chopped
  • 3 cans drained cannelini
  • 1 c soft whole wheat bread crumbs
  • salt and pepper

Preparation

Step 1

Preheat 350.
Heat 1 T oil in heavy pot, add onion, celery, carrot and saute till tender. Add garlic, tomato paste and thyme. Cook abouit 1 minute. Gradually stir in broth. Add kale, stir until wilted. Stir in beans, add salt & pepper.

Transfer mixture to a casserole dish. Toss bread crumbs with remaining 1 Tablespoon oil. Sprinkle over casserole. Bake until brown and bubbly, 30 mins.
