Mexican Chicken and Rice

Ingredients

  • 1 tablespoon oil
  • 1 pound chicken breasts, cubed
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 package frozen sweet corn, thawed
  • 1 cup chicken broth
  • 1 1/2 cups salsa
  • 1 1/4 cups minute rice
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Heat oil in large skillet over medium-high heat. Add chicken, onion and pepper. Cook and stir until chicken is cooked through. Add corn, broth and salsa; bring to boil. Stir in rice; cover and remove from heat. Let stand 5 minutes. Fluff with fork. Sprinkle with cheese. Let stand, covered, until cheese melts.
