Cajun Chicken Pasta Recipe

Ingredients

  • serves 2
  • 1 lb fettucine/linguine, cooked and drained
  • 2 medium size cleaned boneless, skinless chicken breast
  • Cajun seasoning (store bought)
  • 1 tsp olive oil
  • 2 tbs butter
  • 1 qt heavy cream
  • 4-5 pcs sundried tomato
  • 1/2 tsp chopped onion
  • 1/4 tsp garlic salt
  • 1 stalk green onion, thinly sliced
  • A dash of cayenne pepper, optional

Preparation

Step 1


1. Marinate chicken breast with cajun seasoning.

2. In a big heavy skillet, heat olive oil in medium high and add chicken until they are cooked. Set aside.

3. Using the same skillet, lower the heat to medium low and add butter. Scrap the crust from the bottom of the skillet. Add the rest of the ingredients and stir continuously until it boils. Taste and add pasta. Continue stirring until all the pasta are coated with the sauce.

4. Serve immediately with sliced chicken breasts.

*** Don't leave the cream on the stove without stirring and/or with high heat. This will cause the cream to curdle.
