Ingredients
- 2 TBS chopped red onion
- 1 1/2 TBS lime juice
- 1 1/2 TBS olive oil
- 2 TBS fresh cilantro, chopped, divided (1 TBS / 1 TBS)
- salt and pepper to taste
- 4 oz cooked shrimp, peeled, deveined, and cut into small pieces
- 1 ripe avocado, peeled and diced
- 4 cups mixed salad greens
Preparation
Step 1
1. Combine onion, lime juice, olive oil, 1 TBS cilantro, salt, and pepper in a medium bowl; stir with a whisk. Add shrimp and avocado pieces; toss.
2. Divide salad greens evenly among 4 plates. Arrange shrimp mixture over greens. Sprinkle with remaining 1 TBS cilantro.
Makes 4 servings. Each serving = 4 Weight Watchers points.
