Mushroom (Holy Shitake) Pizza

  • 1 1/2 pound of mushrooms (regular, shitake, portabella)-diced
  • 1 cup caramelized onions
  • garlic flavored olive oil
  • 1 cup sharp white cheddar cheese--shredded
  • 3 TBS fresh chives--chopped
  • truffle oil
  • 1 cup mozzarella cheese
  • 2 TBS sherry
  • 1 TBS lemon juice
  • 2 cloves garlic minced
  • 3 TBS butter



Step 1

Roll out pizza dough (basic dough recipe) and and spread garlic flavored olive oil across shell.

Melt butter and saute garlic. Add sherry, lemon juice and mushrooms and saute until soft. Spread on pizza shell. Add caramelized onions, sharp cheddar cheese, parmesan cheese and chopped chives. Drizzle with truffle oil.

Bake until bottom browns and add mozzarella cheese a few minutes before removing from the oven.
