Venison Jerky

Ingredients

  • 2 lbs lean ground venison or beef
  • 2 1/2 tsp salt
  • 2 tsp MSG
  • 1 tsp hot pepper sauce
  • 2 tsp quick tender
  • 1 1/2 hell flakes
  • 2 t water
  • 2 tsp liquid smoke
  • 1 tsp garlic powder
  • 1/2 tsp pepper

Preparation

Step 1

In a large bowl, combine venison, salt, msg, hot sauce, curing mixture, hell flakes, water, liquid smoke, garlic powder and pepper. Mix thoroughly. Cover, and refrigerate at least 2 hours.

Dehydrate 5 to 10 hrs, turning half way thru.

When finished, blot off any grease. Store in the refrigerator in a jar with a tight fitting lid.
