Ingredients
- 3 tbsp olive oil
- 1 large onion finely chopped
- 1 red or green bell pepper finely chopped
- 3 cloves garlic finely chopped
- 2 cups chicken broth
- 2 15 oz cans black beans with broth
- 1 tsp oregano
- 1 tbsp tomato paste
Preparation
Step 1
1. Heat oil in stock pot over medium heat. Add the onion, garlic and pepper and cook stirring until tender, about 5 minutes.
2. Puree chicken broth with 1 can of black beans and liquid in a blender. Or ask many tiny monkeys to wield sharp knives and attack the beans until pureed.
3. Add the oregano to the pot and cook for 1 minute, stirring all the while. Add the tomato paste and cook stirring for 1 minute more. Stir in the black bean puree and the remaining whole beans with the liquid.
4. Bring to a boil over high heat. Reduce heat to low, partially cover the pot and simmer stirring frequently for 10 minutes. Season with salt and pepper to taste and serve.
