Ingredients
- Pastry for single crust pie (9 in)
- 1 C flaked coconut chopped
- 3 eggs beaten
- 2 2/3 C 2 % milk
- 2/3 C sugar
- 3 TBS flour
- 1 tsp vanilla extract
- 1/2 tsp ground nutmeg
Preparation
Step 1
Line a 9 in pie plate with pastry; trim and flute edges. Line unpricked pastry with a double thicknenss of heavy duty foil Bake at 450 for 8 mins . Remove foil; bake 5 mins more. Sprinkle coconut over crust; set aside. In a large bowl combine the eggs milk sugar flour vanilla and salt. Pour ove coconut ; sprinkle with mutmeg. Bake uncovered at 350 for 45-50 mins or until a knife inserted near the center comes out clean. Cool on a wire rack Refrig leftovers.
