Herbed Chicken Thighs

Ingredients

  • 3 tbsp mayonnaise (or plain yogurt)
  • 2 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp each of dried rosemary, dried basil, dried thyme, dried savory
  • 2 tsp grated parmesean cheese
  • 2 cups crushed cornflakes (or bran flakes)
  • 1/4 tsp black pepper
  • 8 boneless skinless chicken thighs

Preparation

Step 1

Preheat oven to 385F. In a small bowl combine the first 5 ingredients. In another bowl combine the cornflakes and pepper. Take the chicken thighs and dip each one into the mayonnaise mixture and then in the cereal mixture, making sure they are coated well. Place the thighs in a baking dish and bake in preheated oven for 35-40 minutes or until juices run clear when pierced with a fork.
