Spinach Alfredo

love this with scrambled eggs for breakfast OR any meal ... it is low carb. I like to sprinkle crushed red pepper flakes and Franks hot sauce over the spinach alfredo.

Cover with scrambled eggs and more pepper flakes and hot sauce.

Ingredients

  • 2-3 cups raw spinach
  • 1/4 cup almond mild or coconut milk or water
  • 2 TB grated Parmesan cheese
  • 1 TB heavy cream
  • 1 tsp. minced garlic
  • 1/2 TB bacon grease or butter or coconut oil
  • salt and pepper to taste

Preparation

Step 1

Put oil/grease in skillet, with rest of the ingredients on medium to high heat until spinach wilts and 'sauce' thickens.
