Ingredients
- Canola oil
- 2 ripe plantains, peeled sliced into 1/2″ pieces
- 1 ripe avocado, peeled and sliced
- 8 slices guayanese cheese (you may substitute feta or mozzarella)
Preparation
Step 1
1. Heat about 1/2 inch canola oil in a large saute pan set over medium-high heat. Fry the plantain slices until golden brown on both sides. About 5 minutes.Set aside on a paper towel lined plate to dry.
2. Fill cooked arepas with the fried plantains, cheese and avocado slices.
Makes enough to fill 4 arepas.
