Ingredients
- 4 boneless skinless chicken breasts (about 2 lbs), cut into bite-sized pieces
- 2 medium sweet potatoes, peeled and cubed
- 2 medium Yukon Gold potatoes, peeled and cubed
- 2 medium carrots, peeled and cut into 1/2" pieces
- 1 can (28 oz) whole stewed tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp paprika
- 1 tsp celery seed
- 1 cup chicken stock
- 1/4 cup chopped fresh basil
Preparation
Step 1
1. Combine chicken, potatoes, carrots, tomatoes, salt, pepper, cinnamon, nutmeg, paprika, celery seed and stock in slow cooker.
2. Cover and cook on low for 6-8 hours, or high for 3-4 hours, or until done.
3. Sprinkle with basil just before serving.
