  • 2 TEASPOONS OIL
  • 1/2 CUP WHITE ONION, CHOPPED
  • 1/2 RED OR GREEN BELL PEPPER, CHOPPED
  • 1 CAN PETITE DICED TOMATOOES
  • 3 CANS BUSH'S BLACK CHILI BEANS, UNDRAINED
  • 1/2 TEASPOON KOSHER SALT
  • 1 1/2 TEASPOONS GROUND CUMIN
  • 1 1/2 TEASPOONS CHILI POWDER
  • 1 TEASPOON GARLIC POWDER
  • 1 CAN (8.5 OZ.)SWEET GOLDEN CORN, WHOLE KERNEL, DRAINED
  • 1/4 TEASPOON CHIPOTLE CHILI PEPPER (OPTIONAL)
  • OPTIONAL TOPPINGS: SHREDDED CHEDDAR CHEESE, SOUR CREAM, FRESH DICED TOMATOES, TORTILLA STRIPS, AND ONIONS

Preparation

Step 1

IN A SAUCEPAN, COOK ONIONS AND PEPPERS IN OIL FOR 10 - 15 MINUTES OVER MEDIUM HEAT. STIR IN REMAINING INGREDIENTS AND BRING TO A BOIL. REDUCE HEAT TO MEDIUM-LOW OR LOW AND COVER; SIMMER FOR 20 MINUTES STIRRING EVERY FEW MINUTES. SERVE WITH OPTIONAL TOPPINGS, AS DESIRED.
