ORANGE CHICKEN

Ingredients

  • 4-6 boneless/skinless chicken breast or thighs
  • 1 T grated ginger
  • 1 T crushed garlic
  • 1 T sesame oil
  • 1/2 c soy sauce
  • 1/4 c orange juice
  • 2 T orange zest
  • 1 c of flour
  • 1/2 c cornstarch
  • 2 tsp. ground ginger
  • 2 tsp. granulated garlic powder
  • salt and pepper
  • 1 jar of orange marmalade
  • 1/2 c honey
  • 1/2 c sugar
  • 1/2 c soy sauce
  • 1/4 c rice vinegar
  • the zest of 1 orange

Preparation

Step 1

. Cut chicken into medium size chunks, marinade with the grated ginger, crushed garlic, 1T sesame oil, 1/2c soy sauce, 1/4c orange juice, 2T orange zest

. Combine flour, cornstarch,, salt, pepper, ground ginger, granulated garlic

. Make sauce with the orange marmalade, 1/2c orange juice, 1/2c soy sauce, 1/2c sugar, 1/4c rice vinegar and the zest of 1 orange

. Strain out marinade from the chicken, dredge the chicken in the flour mixture and fry until golden brown

. Discard the grease, add the chicken back into the pan and stir in the sauce, cook for 10 minutes over low heat, serve with rice
