Marinated Vegetable Salad

Ingredients

  • 1 cup chicken broth
  • 4 medium carrots, sliced
  • 2 cups caulifowerets
  • 2 small zuccini, diagonally sliced
  • 1/4 cup wine vinegar
  • 1 envelope Italian salad dressing mix

Preparation

Step 1

In saucepan, bring broth to boil. Add carrots; simmer 2 minutes. Cool. Stir in remaining ingredients. Refrigerate 6 hours or more, stirring occasionally.
