Ingredients
- 1 fennel bulb, sliced - center core removed
- 1/4 red onion, thinly sliced
- 1/2 English cucumber, peeled and sliced
- 1 navel orange, peeled, segmented, and chopped
- 4 handfuls of fresh spinach leaves
- 2 pomegranates, juiced
Preparation
Step 1
Layer onions, fennel, cucumber, and orange slices in a bowl. Toss with Pomegranate juice. Lay on bed of spinach leaves to serve.
