Cod & Creamed Spinach Casserole

Ingredients

  • 12 oz. baby spinach, cooked, drained, squeezed out liquid and chop
  • 2 T unsalted butter
  • 1 shallot, minced
  • 1/3 cup heavy cream
  • 1 tsp kosher or sea salt
  • 3/4 tsp black pepper
  • pinch of nutmeg
  • 2 + lbs of cod, haddock, or any white fish
  • Mix together 1/2 cup panko and 1/3 cup fancy shredded sharp cheese

Preparation

Step 1

Cook the shallot in medium pan 2 mins, add cream and bring to boil, stir in spinach, S&P and nutmeg. Cook 5 mins till thickened.
Season fish with S&P and place in buttered 2 1/2 qrt. baking dish. Spread creamed spinach on top, top with panko, cheese mixture. Bake 400 30 mins. or till fish is just opaque in thickest part. Serve immediately.
