Cheesy Vegetable Patties

Ingredients

  • 8 oz frozen broccoli florets
  • 4 oz breadcrumbs
  • 6 oz cheddar, grated
  • 2 1/2 TBSP water
  • 2 1/2 TBSP olive oil
  • 1 1/2 tsp baking powder

Preparation

Step 1

1. Preheat oven to 375. Stem or cook broccoli until soft. Drain and chop up well (I used a food processor)

2. Combine broccoli with remaining ingredients and mix well. Form the mixture into nugget shapes and place on a greased baking sheet, about 3 inches apart.

3. Bake for 20-25 minutes. Serve warm. (Next time I make them I might flip them over ½ way through)

4. To freeze let them cool and place in airtight bag or container.
