Ingredients
- 2 whole Cornish hens
- 3 tbsp. olive oil
- 3 tbsp. honey
- 1 tbsp. soy sauce
- 1/2 tsp. ground ginger
- 1/2 tsp. ground red pepper
- 1/2 cup chicken broth
Preparation
Step 1
Preheat oven to 375 degrees. Place hens breast side up in a baking pan. In a small bowl, combine honey, oil, soy sauce, ginger and red pepper and blend well. Brush sauce generously over hens. Pour chicken broth in bottom of pan; not over hens. Roast for one hour (basting occasionally) or until thermometer inserted in thickest part of thigh registers 185 degrees.
Note: cover hens with foil if they start to get too brown
