Spicy Pork Chops

Ingredients

  • 1 lb lean center-loin pork chops (about 3/4” thick)
  • 2 tbsp taco seasoning
  • 2 tsp canola oil
  • 1 cup chunky-style salsa
  • 1/3 cup peach preserves

To Make:

Rub both sides of each pork chop with taco seasoning. In a heavy nonstick skillet, heat canola oil over medium-heat. Brown pork chops for about 2-3 minutes, turning often until done. In a medium bowl, combine salsa and peach preserves until warm. Serve each chop over 1 cup cooked brown rice with a 1-cup side of freshly steamed broccoli. Top with peach salsa mixture.
