Ingredients
- CRUST
- 2 sticks butter
- 1/2 cup confectioners' sugar
- 2 cups flour
- LEMON MIXTURE
- 4 eggs
- 2 cups sugar
- 1 tsp. grated lemon peel
- 6 tbs. fresh lemon juice
- 1/3 cup flour
- 1 tsp. baking powder
- Confectioners' sugar for top
Preparation
Step 1
Cream butter and 1/2 cup confectioners' sugar until light and fluffy. Add 2 cups of flour and beat until blended. Spread evenly in well-greased 13 X 9 inch pan. Bake at 350 for 20 minutes.
Beat eggs until frothy. Gradually add sugar, until thickened. Add lemon juice, peel, 1/3 cup flour and baking powder. Beat until thoroughly blended. Pour over baked crust, return to oven and bake 20-30 minutes, until pale gold.
Remove from oven and sprinkle evenly with powdered sugar. (I do this after they have cooled). After cooling, cut into small squares.
