PASSOVER BANANA CAKE

Ingredients

  • 7 eggs, separated
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas
  • 3/4 cup matzo cake flour
  • 1/4 cup potato starch
  • 1/2 to 1 cup coarsely chopped nuts
  • FROSTING
  • 1 egg white, slightly beaten
  • 1/2 cup plus 2 tablespoons sugar
  • pinch of salt
  • 3 tablespoons cold water

Preparation

Step 1

Beat egg yolks with sugar until creamy. Combine salt, bananas, cake flour and potato starch. Add to beaten egg yolk mixture. Beat egg whites stiff, adding a pinch of salt for quicker action, and fold into the batter. Fold in chopped nuts lightly and turn the mixture into a lightly greased 10-inch spring-form pan. Bake 40-45 minutes or till light brown on top at 325 degrees. Cool on a rack. When cool, decorate with the frosting.

FROSTING
Combine egg white, sugar, salt and water. Place on top of boiling water in a double boiler. Heat the ingredients, mixing with a fork for 7 minutes, or until thick enough to spread.
