  • 2 cups cooked black beans (if using canned, rinse) (8 carbs)
  • 4 cups tomatoes, diced (2 carbs)
  • 1 1/2 cups red onion, diced (1 carb)
  • 1/2 cup green onion, chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons jalapeno pepper, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
