Festival Sweet Potatoes

Ingredients

  • 3 large sweet potatoes or yams
  • 6 pineapple slices
  • 4 tablespoons butter
  • 1/2 cup brown sugar
  • 1/2 cup sherry

Preparation

Step 1

Preheat oven to 375 degrees. Boil potatoes in skins until tender, 20 to 30 minutes. Peel and cut in half lengthwise. Arrange pineapple in single layer in greased shallow baking dish. Top each slice with potato half, cut side down. Combine remaining ingredients and heat until sugar is dissolved; pour over potatoes. Bake for 30 minutes, basting often.
