Ingredients
- dressing:
- 2 roasted red bell peppers, julienned
- 1 can lentils, drained and rinsed
- 3 cups cooked brown rice
- 1 cup chopped fresh flat leaf parsley
- 1/2 cup thinly sliced green onion
- 1/4 cup slivered dried apricots
- 1/4 cup olive oil
- 2 tbs lemon juice
- 2 tbs balsamic vinegar
- 1 tsp liquid honey
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- salt and pepper
Preparation
Step 1
-in large bowl, combine red peppers, lentils, rice, parsley, green onions and apricots
-prepare the dressing – whisk together
-pour dressing over salad and toss to coat
