Ingredients
- 1 1/2 cup whole wheat couscous
- 2 cups hot vegetable broth
- 1/2 cup cubed goat cheese
- 1/2 batch big batch oven roasted ratatouille, cooled
- 1 package of mixed salad greens
- 1 cup reduced fat sun-dried tomato dressing
Preparation
Step 1
-place couscous in large bowl and pour in boiling stock; stir and cover for 15 minutes or until stock is absorbed; fluff with fork
-combine cooled couscous, goat cheese and cooled ratatouille
-before serving pour dressing evenly over greens and drizzle down the sides of the couscous and ratatouille
