roasted vegetable and couscous with goat cheese

Ingredients

  • 1 1/2 cup whole wheat couscous
  • 2 cups hot vegetable broth
  • 1/2 cup cubed goat cheese
  • 1/2 batch big batch oven roasted ratatouille, cooled
  • 1 package of mixed salad greens
  • 1 cup reduced fat sun-dried tomato dressing

Preparation

Step 1

-place couscous in large bowl and pour in boiling stock; stir and cover for 15 minutes or until stock is absorbed; fluff with fork
-combine cooled couscous, goat cheese and cooled ratatouille
-before serving pour dressing evenly over greens and drizzle down the sides of the couscous and ratatouille
