Ingredients
- lettuce
- cucumbers cut into 1/2 rounds
- diced avocado
- diced mango
- diced red onion
- diced colored peppers
- tomatoes,diced or thinly sliced
- Salmon fillet
- orange juice
- garlic cloves,sliced
- black pepper
- lemon juice,freshly squeezed
- Dressing
- 2 cloves garlic,crushed
- 1/2 cup mayonnaise
- 3 Tbs orange juice
- 2 Tbs freshly squeezed lemon juice
- dash of oregano
Preparation
Step 1
Prepare salmon,drizzle orange juice on top of the fillet,and sprinkle with garlic and pepper. Bake until done. Squeeze lemon juice on top of fillet while warm. Once cool,cut into cubes. Assemble salad and top with cubes of baked salmon. Stir dressing into the salad. Serve immediately.
