Maple Mashed Sweet Potatoes

Ingredients

  • 6 lb. sweet potato
  • 1 stick melted unsalted butter
  • 1/2 C heavy cream
  • 2 T pure maple syrup
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

Preheat oven to 400 degrees

Prick each potato twice with fork and bake in a foiled lined backing sheet about 1 hour, remove and cool to touch

Half potatoes lengthwise and scoop out warm flesh into a bowl

Mash potatoes dry with masher until smooth

Stir in heavy cream, butter salt and pepper until smooth

Potatoes can be made 2 days ahead and chilled covered, Reheat at 350 or microwave
