Broccoli Chicken Salad

Ingredients

  • 3 T vegetable oil
  • 1/2 cup peanut butter (any kind)
  • 3 T reduced sodium tamari or soy sauce
  • 2 T lime juice
  • 2 tsp minced fresh ginger
  • 1 garlic clove, minced
  • 1 lb. broccoli florets, roughly chopped and microwaved for about 1 minute or until slightly tender; cool
  • 1 cup frozen peas, thawed
  • 2 cups shredded cooked chicken
  • 1/2 cup roughly chopped cilantro leaves

Preparation

Step 1

Mix first 6 ingredients and 1/3 cup water in a bowl. Toss with remaining ingredients.
