Delicious Apple Pie

Ingredients

  • 1 pastry for a double crust 9 inch pie
  • 3/4 cup firmly packed light brown sugar
  • 1 tbs flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • 1 tbs grated lemon zest
  • 6 cups apples, peeled, cored and sliced thinly
  • 1 tbs lemon juice
  • 2 tbs butter or margarine

Preparation

Step 1

Line 9 inch pie pan with half pastry rolled out.

In a large bowl, combine sugar, flour, cinnamon, nutmeg, salt and lemon zest. Add apples, toss to coat. Spoon mixture into pie crust. Sprinkle with lemon juice and dot with butter.

Top with remaining pastry. Trim and flute edges. Cut slits in top to allow steam to escape.

To prevent over browning, cover edges of crust with foil. Bake 20 minutes. Remove foil. Bake 20-25 minutes or until top is golden brown.
