Turkey Salad Pita Filling

Ingredients

  • 2 c. finely diced cooked turkey or chicken (Schwan's precooked and diced chicken is really easy!)
  • 1/2 c. finely diced celery
  • 1/4 c. finely chopped green onion
  • 2 hard-cooked eggs, chopped
  • 1 T. lemon juice
  • 1/2 t. salt (less if using Schwan's precooked)
  • 1/4 t. pepper
  • Dash of cayenne pepper--careful, not too much!
  • 1/2 to 3/4 c. mayonnaise
  • Pita bread--whole grain or regular

Preparation

Step 1

Mix turkey or chicken, celery, onion, eggs, lemon juice, salt, peppers and mayo in a bowl. Cover and refrigerate several hours to allow flavors to blend. Fill three-four pitas, cut in halves.
