Sausage & Sweet Potato Gratin

Original recipe called for Quorn sausages. I made it with low-fat sausages from Joe's. Comfort food at its finest.

Ingredients
- 750 g / 1 lb 11 oz sweet potatoes, peeled and cut into chunks
- 1 onion, chopped
- 1 clove garlic, crushed
- 8 low-fat sausages (Joe's Sausages, for example)
- 400 g tin chopped tomatoes
- 400 g tin cannellini beans, drained and rinsed
- 100 ml / 4 oz tomato passata
- 1 tbsp fresh rosemary, chopped
- 2-3 tbsp low-fat cheddar cheese, grated
Preparation
Step 1
1) Put sweet potatoes in a pan, cover with water. Cook until tender, drain and mash. Season with salt and pepper.
2) Preheat oven to 200 degrees C / 400 degrees F. Cook onion in Fry Light cooking spray for 5 minutes. Add garlic and sausages. Stir well. Cook for 5 minutes then add tomatoes, beans, passata, and rosemary. Season with salt and pepper and simmer for 5 more minutes.
3) Transfer sausage mix to a large gratin dish. Top with the mash. Sprinkle grated cheese on the top and bake for 20 minutes or until browned.
