Chicken and Squash Chili

Ingredients
- 1 Tablespoon olive oil
- 1 yellow onion, diced
- 1 green bell pepper diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 pound roasted butternut squash, mashed *see prep guide
- 1 (15 ounce) can crushed tomatoes
- 2 cups low-sodium chicken broth
- 1 (15 ounce) can black beans
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 teaspoon kosher salt
- 1 pound cooked balsamic chicken

Preparation
Step 1
1. Heat a large pot over medium heat and add oil.
2. Add onion, bell pepper, and garlic. Cook for 3 minutes.
3. Add zucchini, squash, tomatoes, broth, black beans, cumin, chili powder, and salt. Bring to a simmer.
4. Add chicken and heat through to combine flavors, about 5 minutes.
