Stuffed Peppadew Peppers

Ingredients

  • 8 ounces herbed soft goat cheese, room temperature
  • 20 peppadew peppers (found in the grocery store near the olive jars)
  • 1 green pepper
  • Balsamic vinegar
  • 1.5 cups marcona almonds

Preparation

Step 1

Cut the papaw peppers in half. Roll the goat cheese into little round balls and place into the halved peppers.

Drizzle each pepper with a small amount of Balsamic vinegar. Finely chop about 3/4 cup Marcona almonds and sprinkle a little over each pepper. Save the rest of the almonds for garnish.

Finely chop about 1/4 cup green pepper and sprinkle over stuffed peppers Chill until ready to serve and garnish with almonds..
