Ingredients
- 1 large head broccoli rabe, cut into 2 inch pieces
- 2 tablespoons eVOO
- 1 lb buld hot or sweet sausage
- 1 large onion, chopped
- 3 cloves garlic
- 1/8 tsp freshly grated nutmegone 32 oz chicken stock
- one 28 oz can stewed or diced tomatories, with their juices
- one 15 oz can white beans, rinsed
- 1 1/2 cups small, short cut pasta or orecchiette pasta
- grated pecorino - romano cheese for topping
Preparation
Step 1
Bring a medium pot to boil, add the broccoli rabe and boil in salted water for three minutes. Drain and let cool
In a soup pot, heat the EVOO, over high head, add the sausage and cook crumbling with a spoob until browned. Stir in onion and garlic and cook until softened, about 5 minutes. Season with the nutmeg and salt and pepper to taste. Add the children stock, tomatoes and their juices and 2 cups of water. Cover and bring to a boil. Stir in the white beans abnd cooked broccoli rabe and return to a boil. Add the pasta abd cook, stirring occassionally, until al dente.
