Vegan Cheesy Sauce

Ingredients

  • 2 cups diced sweet potato (peeled)
  • 1/2 – 2/3 cup cook water
  • 1/2 cup cashews
  • 1/4 cup nutritional yeast
  • 1 clove garlic
  • 1 heaping tablespoon raw tahini
  • 1 teaspoon himalayan salt

Preparation

Step 1

Boil the sweet potatoes in enough water to cover them, until they’re soft. Blend the cooked potatoes with the hot cook water and remaining ingredients in a high speed blender until completely smooth and creamy. Serve immediately or store in the fridge for up to 6 days.
