Cheesy Tequila Lime Chicken

Ingredients

  • Marinade:
  • 1 cup water
  • 2 teaspoons minced garlic
  • 1/3 cup teriyaki sauce
  • 1 teaspoon liquid smoke
  • Salt and pepper
  • 1 tablespoon of olive oil
  • 1/4 cup tequila
  • Juice of 1 large lime
  • 2 tablespoons of jalapeno juice, if desired
  • 4-5 chicken breasts or 8-10 tenders
  • 1 cup grated Mexican cheese blend
  • Dressing:
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 1/2 teaspoon of apple cider vinegar
  • 2 tablespoons of chunky salsa
  • 1 teaspoon of minced jalapenos
  • Pinch of paprika/cayenne/cumin/chili powder/garlic powder/parsley
  • 1 tablespoon of minced onion (optional)

Preparation

Step 1

Marinate the chicken in the marinade for at least 3 hours. Grill or brown chicken until almost done.


Pour dressing mixture over marinated chicken breasts in oven safe dish. Cover with Mexican cheese blend. Preheat oven to 450 degrees. Cook chicken mix until cheese is melted and bubbly.

Serve over rice or crumbled corn chips.
