Baked Squash

Ingredients

  • 2 lbs. yellow squash, sliced into 1/4" slices
  • 1 small onion, chopped
  • 1 egg
  • 1/2 c. grated sharp cheddar cheese, plus more for topping
  • 6 to 8 Ritz crackers, crushed, plus more for topping
  • 3 Tbsp. sugar
  • salt and pepper to taste

Preparation

Step 1

Cook squash and onion in boiling water (or in a microwave safe covered dish in about 1/4 c. water)until tender. Drain well and mash squash mixture with a potato masher. Add remaining ingredients as listed. Pour into a greased baking dish and top with additional cheese and crushed crackers. Sprinkle with paprika. Bake at 375 until hot and bubbly, about 25 minutes.
