Ingredients
- 3 beaten eggs
- 1/2 cup toasted flaked coconut
- 1/4 cup sugar
- Dash salt
- 2 cups milk
- 1 teaspoon vanilla
- Toasted flaked coconut (optional)
- Fresh mint sprig (optional)
Preparation
Step 1
In a heavy saucepan, blend together beaten eggs, sugar, and salt thoroughly. Gradually stir in milk. Cook over low heat, stirring constantly, till mixture coats a metal spoon, about 15 to 20 minutes. Remove from heat. Immediately set saucepan in a larger pan of cold water; stir custard mixture 1 or 2 minutes more. Stir in vanilla. Pour custard mixture into storage container. Cover and chill thoroughly. Just before serving, stir in the Vz cup toasted flaked coconut. Garnish with a ring of additional toasted flaked coconut and a fresh mint sprig, if desired. Makes about 2l/2 cups sauce.
