Primal Blueprint Winter Squash Mash

Ingredients

  • 2 winter squash (acorn, sugar pumpkin etc) I used acorn
  • 4-6 fresh sage leaves, finely chopped
  • 4 tbs of grass fed butter

Preparation

Step 1

To steam, peel squash with a sturdy vegetable peeler or a paring knife. Cut in half and scoop out seeds. Cut flesh into large, even chunks and steam until easily pierced through with a fork, about 15-20 min
To bake, preheat oven to 350 degrees. Cut the squash in half. Remove the seeds, scoop them out. Save if you want to bake. Place the 2 halves face down in a baking dish or sheet pan with a lip around it to catch liquids. Bake the squash until the flesh is uniformly soft, roughly one hour. While still hot scoop the squash flesh out of the skin(if not already peeled) and coursely mash it with sage, butter and salt.

even though it takes an hour i think it is much easier to scoop if the skin then chop up the squash and steam it. its a pain in the but to chop it up before its cooked
