Ingredients

  • 1 cup sweet potato pulp
  • 1 cup unsalted pecan halves
  • 1 cup unsalted walnut halves
  • 2 eggs
  • 1 1/2 cups chopped dates
  • 2 T pure maple syrup
  • 1/2 cup safflower oil
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure almond extract
  • 1 2/3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 1 1/2 cups raisins
  • 1 cup rolled oats
  • 1 cup chocolate chips or more if desired
  • 1/4 cup sunflower seeds

Preparation

Step 1

1. Preheat the oven to 375 degrees
2. Combine sweet potato pulp, eggs, dates, maple syrup, oil and extracts. Blend well with an electric hand-held mixer
3. Add flour, baking soda, baking powder, cinnamon and salt
4. Stir in crushed nuts, raisins, oats, chocolate chips, and sunflower seeds.
5. Roll dough into 1-inch balls. Place on ungreased cookie sheet and bake for about 15 minutes or until the cookies turn light brown in color.
