Ingredients
- 1 eggplant peeled and diced
- 2 tablespoons Olive Oil
- 1 small diced onion
- 1 green pepper diced
- 1 minced garlic
- 2 tomatoes peeled and chopped
- 1 teaspoon Brown Sugar
Preparation
Step 1
Sauté eggplant in olive oil on low flame until tender. Add onion,pepper and garlic. Sauté until all is soft.
Peel a couple tomatoes and cut up and add to the mixture. Season with salt and pepper and 1 teaspoon brown sugar. Cover with Parmesan cheese .Bake at 350 until heated through.
