Ingredients
- 3 medium cloves of garlic, divided
- 3 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 can (28 oz) diced whole tomatoes in juice (DO NOT DRAIN)
- 1 bay leaf
- 1 tablespoon fresh parsley
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh basil
- 1/4 cup white wine
- 1 teaspoon salt
- 1 pound penne pasta
Preparation
Step 1
1. Chop 1 garlic clove, heat 1 tablespoon oil in saucepan over med heat. Add 1 garlic and cook 30 seconds. Add tomato paste and cook stirring for 2 minutes. Add tomatoes in juice and bay leaf, simmer 30 minutes. While simmering start pasta.
2. Meanwhile, thinly slice remaining garlic. Heat 1 tablespoon oil in 12 inch skillet, med heat. Add garlic and cook until just beginning to turn golder (30 sec). Add parsley, basil , red peppers and cook 30 seconds. Add wine, boil 30 seconds. Stir in tomato sauce after 30 minutes is up. Add salt and simmer 4-5 minutes.
3. Toss with pasta and remaining 1 tablespoon oil. Mix.
