Spinach Crustless Quiche

This makes 12 quiches the size of muffins

Ingredients

  • 8 eggs
  • 1 small onion
  • tbsp EVOO
  • 1 box of frozen spinach or fresh spinach
  • 1/2 cup of shredded mozzarella or Swiss cheese
  • salt and pepper

Preparation

Step 1

Sautee the chopped onion in the olive oil.

Drain the water out of the frozen spinach.

Shred the cheese.

Mix everything together.

Prepare muffin tin with cupcake holders.

Spray PAM in the foils.

Fill 3/4ths of each holder.

Cook at 350 for 25 minutes.

You can freeze them and cook them in the microwave.

You may also ass red peppers or tomatoes or any other vegetable.
