Slow Cooker Pasta Fagioli

Ingredients

  • 1 (14 oz) can diced tomatoes
  • 1 (15 oz) can of Cannellini or Great Northern Beans, rinsed and drained
  • 1 (15 oz) can of kidney beans, rinsed and drained
  • 1 (6 oz) can of tomato paste
  • 2 tablespoons Italian seasoning
  • 2 cups chicken stock
  • 1/2 pound of pasta (I used shells), cooked
  • 1 cup grated Parmesan cheese
  • salt and pepper

Preparation

Step 1

In your slow cooker, layer in the diced tomatoes, beans, tomato paste, italian seasoning, and stock. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.

About 10 minutes before you're ready to serve, prepare your pasta. Combine the cooked pasta to your slow cooker ingredients at the end, stir to combine and then dish into bowls. Top each bowl with grated Parmesan.
